From a chemical point of view, hyaluronic acid is a polysaccharide belonging to the glycosaminoglycan family (GAG), which are macromolecules made up of long sequences of simple sugars. Hyaluronic acid is traditionally obtained from animal tissues, typically rooster combs. More recently, a combination of biotechnological sciences and pharmaceutical technology has enabled the production of hyaluronic acid by microbial fermentation.
